Fragrant Coconut Chicken Curry with Spicy Lentils
Back to the faithful freezer stores of a chicken curry with cardamom and clove undertones, mellowed with coconut sauce and to another trusty tupperware for the fiery tomato based lentils. Served with wild rice, natural yoghurt and toasted coconut flakes.

Tomato Chicken Curry and Lunch Add OnsA little freezer keeper from a dinner gone by, but this time round pepped up with some homemade carraway flat breads, cumin and chili roast squash, mixed salad and yoghurt and coriander dressing. I ended up making mini wraps out of these which was nice and lighter than with the usual rice accompaniment.

Mish Mashed Left Over Curry
Beef was sweated down in a lemony spiced mix and onion slithers added. The curry was actually some homemade daal with some cauliflower and spinach added in with extra cumin and corriander. The bread was a quick diy flatbread; simply plain flour, water and seasoning mixed until forms a ball I like to add in carraway or fennel seeds for extra flavour then get a saucepan sizzling and toast them off.

Yellow Lentil Curry
I ended up freestyling this one, toasting off some spices like cumin, green cardomom and pepper corns then smushing it all down with some ginger and garlic. Cooked this down with the lentils and some defrosted chicken stock, I also added shaven off corn kernels for a sweet crunch and a lonely sweet potato I had lying around. Served with some rice and brown lentils for a bit of bite and lime for zing!
