Grilled Caramelized Peach Salad with Ricotta
I love salads, and it is real easy to lift leaves with the dressing, some nut crunch (toasted, even better!,) with cheese, with some elements cooked and/or part cooked. For this I caramelized the peaches on a grill pan, crispened up some streaky smoked bacon, broke that into the pieces, dolloped on ricotta, dropped a whole lot of mixed nuts and seeds down and drizzled a citrus-y grapefruit vinaigrette to perk everything up.

Momofuku Apple Kimchi Salad
As odd as it sounds it is super tasty, something so sweet and pure as apples, muddled with the myriad of flavours from the kimchi  - how can this work? But again, with the other components of crispened smoky bacon and maple syrup combined yogurt, everything was in perfect harmony! What else you can see from the photo was a basic slightly pickled slaw and rocket to bulk up the salad.

Pork, Roast Vegetable and Salad

A bit of a fail safe lunch of roast vegetables with an addition from the other half of the pork belly from the other night (this half roasted but not marinated.) Veg of choice was some celeriac and sweet potato tossed in extra virgin olive oil, garlic and thyme, topped with little crunchy cubes of crispened pork skin.

Halloumi Veg Medley Salad
No particular rhyme or reason to this lunch apart from  thought the flavours went well and they were all in my fridge to use up. So grilled halloumi, lightly pickled fennel, carrots and spring onion, some wild rice, spinach leaves and toasted cashew nuts - a lot going on but worked, salty cheese, pang from pickled veg and nuttiness from the cashews.

First time I have ever made this, but it was perfect for a lunch, super flavourful and I know I say it all the time but real easy too! Toast off the bread (any leftover really, for this I used some tiger bread chunks) which is pre rubbed with garlic, fresh thyme and drizzled with extra virgin olive oil. Then prepare the dressing, which is 3 parts oil and one part fresh lemon juice, add some chopped capers and chopped anchioves- keep aside and only add when you need to eat,  to prevent everything getting too soggy. The salad itself is made of deseeded and chopped tomatoes, thinly sliced red onions and some leaves I had rocket which was nice and punchy. Then combine everything!

Orange and Chicken Salad
Tasty way to use up the rest of that roast chicken. Chucked in a salad with some blanched brocolli florets, 
orange segmets, carmelised onions, sugared and chilli-ed pecans. All tossed in a citrus dressing, of fresh OJ, olive oil, heaps of pepper, salt, bit of dijon and orange zest,
