WEDNESDAY

So, today is indeed Sunday (hurray!!) but this was what I was munching and donning on Wednesday. I'll be playing this delightful game of catch up for the next two days thanks to internet problems earlier in the week!

Merguez and bulgar in a Dukkah wrap
So, I had a lot of left over dukkah from Monday and thought mixing it through a simple flatbread mix  would work well with the other flavours inside the wrap (roughly 2 tbsp of dukkah to 180g of plain flour and mixed with a tbsp of olive oil and enough water to bring it together, this is then rolled and cooked in  a frying pan which is super hot!) Star of the wrap was one of Andrew's hand made merguez sausages, they were spiced but not too fiery, ideal with the bulgar wheat mix, carrot, cucumber, mint which was dressed generously with lemon.

Mango Chicken & Lentil Chilli Breads from Pushpesh Pant
This cookbook is well used  in my house, for the sole reason that every thing out of it is absolutely delicious.  If you haven't noticed it in the book shop, it's the one that stands heavier than any other with a white cover and jazzy primary coloured writing, next time you see it, buy it! Once you've got the base spices, ghee and some chilies the prep and cooking is totally doable. The lentil bread was just a blitzed mixture of two kinds of lentils, chili, coriander, turmeric and a few more spices, then flattened and baked. The mango chicken was slightly sweet and sort of like a semi dry curry, not too overpowering as the bread was full packed with punch as too were the spiced peas so a little plain rice and lambs lettuce is rounded it off just fine!

Pancake Day!!!
Sorry guys, technical glitches so half my post only came up!
Had pre made pancakes on Monday and had a savoury ham and cheese filled one and whacked in the panini machine.
And a little side salad with roast squash and onions with some just boiled cauliflower slices and peas, all dressed in lemon homemade vinagrette.

Lamb and Homemade Taboulleh and Pickled Cabbage
Last night was roast lamb night, very traditional potatoes etc but todays guise couldnt have been anymore different. Flinged into the Med with red cabbage easily pickled in white wine vinegar and sugar and bulgar wheat mixed with heaps of parsley, deseeded and chopped tomatoes, crushed garlic, lemon juice and a generous dash of olive oil. Oh and some salad leaves!
